Trans Fats - While these health-damaging fats do occur
in small amounts in meat and dairy fat, they're largely a man-made
phenomenon, created when liquid vegetable oils are processed (hydrogenated)
to make them more solid. This boosts the shelf life, makes cooking
oil last longer and helps create the crispier or creamier textures
ind rich flavors we crave
Beginning January 1, 2006, all packaged foods
sold in the U.S. will be required to disclose the amount of trans
fats they contain on their Nutrition Facts Label
Like saturated
fat, trans fat raises "bad" LDL cholesterol, the kind that clogs arteries
- but also reduces "good" HDL cholesterol that helps unclog them.
There's also evidence that diets high in trans fats are linked with
heart disease and increased rish of diabetes.
