While the
varieties of black tea number in the hundreds, all come from
the same source - Camellia sinensis. Variations in flavor
and color are a result of specific regions, as well as growing, harvesting
and processing methods. Despite their substantial differences
in color and flavor, green tea actually comes from the same plant
as black tea. The difference is in the processing. Green
trea has a lighter, more delicate flavor than black tea.
Black
Tea - Made by rolling tea leaves to release palnt anzymes that cause
the leaves to oxidize and turn brown before drying. These leaves
products a robust, reddish-brown tea.
Green Tea - Leaves that
have been steamed to prevent oxidation before drying. Sometimes
astringent flavor comes. Well known types of green teas: Sencha,
Gunpowder and Matcha.
White Tea - A pale, delicate tea with a
light, subtle flavor.
